Ingredients
2 lobster tails, shells removed
4 tbsp. unsalted butter
2 cloves garlic, minced
Juice of 1 lemon
Salt and pepper to taste
Chopped fresh parsley for garnish
1/4 c. white wine
1/2 c. mayonnaise
2 stalks celery, finely chopped
1 small onion, finely chopped
4 hot dog buns
2 tbsp. olive oil
1 carrot, chopped
1/2 c. heavy cream
2 tbsp. tomato paste
1/4 c. cognac
4 c. seafood stock
1 tsp. paprika
Pinch of cayenne pepper
1/4 c. sherry (optional)
1/2 tsp. Old Bay seasoning
Steps

Sauté Aromatics: In a large pot, melt 2 tablespoons of butter over medium heat. Add chopped onions, carrots, and celery. Sauté until the vegetables soften, about 5 minutes.

Add Lobster Shells: Stir in the lobster shells and continue to cook, allowing them to release their flavors, for an additional 5 minutes.

Deglaze with Wine: Pour in 1/4 cup of white wine and cook until it reduces by half, scraping up any browned bits from the bottom of the pot.

Add Broth: Pour in 4 cups of seafood stock. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 30 minutes.

Strain: Strain the stock through a fine-mesh sieve or cheesecloth into a clean pot, discarding the solids.

Add Cream and Tomato Paste: Return the strained liquid to the pot. Stir in 1/2 cup of heavy cream and 2 tablespoons of tomato paste. Simmer over low heat for 10 minutes, stirring occasionally.

Season and Finish: Season the bisque with salt, pepper, paprika, cayenne pepper, and optional sherry. Simmer for an additional 5 minutes, allowing the flavors to meld.
