Steps

Crack the eggs into a bowl and beat them until the yolks and whites are well combined. Season with a pinch of salt and a dash of pepper. Prepare your fillings by chopping or grating them, if necessary.

Place an 8-inch or 10-inch non-stick skillet over medium-low heat. Add the butter or oil and let it melt, swirling to coat the pan evenly.

Pour the beaten eggs into the heated skillet. Let them cook undisturbed for a minute or two until the edges start to set.
